The inactivation effect of ionizing radiation on microorganisms in raw meat was studied during storage of ground meat at room temperature. Microbiological analysis was performed at various intervals after irradiation- and the number of cells of each type was determined. Proteolytic and lipolytic activities were also determined for each strain.
